    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes thoroughly and poke them several times with a fork. Rub them with olive oil, salt, and pepper.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until tender when pierced with a fork. Remove from the oven and let cool slightly.

    Cook the Bacon

    While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet, drain on paper towels, and crumble into small pieces.

    Prepare the Skins

    Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out most of the flesh, leaving a thin layer of potato. Brush the potato skins with olive oil and sprinkle with salt and pepper.

    Add Cheese and Bacon

    Sprinkle shredded cheddar and mozzarella cheese into each potato skin, followed by the crumbled bacon. Place the filled skins on a baking sheet.

    Bake Again

    Return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and garnish with chopped green onions. Serve hot with sour cream for dipping and a sprinkle of chili powder if desired.
