Prepare the Jalapenos
Preheat your oven to 400°F (200°C). Carefully slice the jalapenos in half lengthwise and remove the seeds and membranes. This will help reduce the heat.

Make the Filling
In a bowl, mix the cheddar cheese, cream cheese, salt, and pepper until well combined.

Stuff the Jalapenos
Using a spoon, fill each jalapeno half with the cheese mixture.

Wrap with Bacon
Wrap each stuffed jalapeno with a slice of bacon, securing it with a toothpick if necessary.

Bake the Poppers
Place the bacon-wrapped jalapenos on a baking sheet lined with parchment paper. Bake for 20-25 minutes until the bacon is crispy and the cheese is bubbly.

Make the Cilantro Crema
While the poppers are baking, blend the cilantro, sour cream, lime juice, and a pinch of salt in a blender until smooth.
