Prepare the Chicken
Preheat your oven to 375°F (190°C). Pat the chicken breasts dry and season both sides with salt and black pepper.

Coat the Chicken
Set up a breading station with three shallow bowls. Place the flour in the first bowl, beaten eggs in the second, and breadcrumbs in the third. Dredge each chicken breast in flour, dip in eggs, and then coat with breadcrumbs.

Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Bake with Marinara and Cheese
Place the fried chicken on a baking sheet. Spoon marinara sauce over each piece and top with provolone cheese. Bake in the preheated oven for about 10 minutes, or until the cheese is melted.

Assemble the Sub
While the chicken is baking, slice the submarine rolls lengthwise. Once the chicken is ready, place each piece in a roll. Garnish with fresh basil if desired.

Serve the chicken parmesan subs hot with extra marinara sauce on the side.
