Cheeses
Bring cheeses to temperature
Remove all cheeses from refrigeration 30–60 minutes before serving so they come to room temperature and develop flavor and texture.
Prepare Brie
Place the whole Brie on the board. If desired, score the rind in a crosshatch or make a shallow cut on top to present a soft center. Place a small spreader nearby.
Slice cheddar and gouda
Cut the aged cheddar and gouda into a mix of bite-sized cubes and thin slices. For visual interest, stack some slices and fan others. Arrange near each other but not touching the Brie.
Prepare goat cheese
Crumble half the goat cheese into a small bowl and leave the rest as a log. Drizzle the crumbled portion with 1 tsp honey and a few cracks of black pepper. Place a small spoon or spreader in the bowl.
Accompaniments
Arrange pickles, olives, and nuts
Place cornichons or pickles in a small cluster or bowl. Spoon olives into a small bowl. Scatter Marcona almonds near the cheeses so guests can pair textures.
Place fruits and preserves
Arrange fresh grapes in small tied bunches and tuck dried apricots into gaps on the board. Put fig jam or fruit preserve into a small ramekin and place next to the Brie and goat cheese for spreading.
Honey and finishing touches
Pour remaining honey into a small bowl or drizzle lightly over the Brie rind if you prefer. Add fresh herb sprigs around the board for aroma and presentation.
Garnish & serve
Assemble the board: choose a large wooden board or slate. Position cheeses first (Brie, cheddar, gouda, goat cheese) spaced across the board to create balance. Fill in with crostini and small bowls (olives, crumbled goat cheese, fig jam).
Serve: bring the board to the table with small plates. Advise guests to start with mild cheeses (Brie, goat cheese) and progress to stronger flavors (gouda, aged cheddar). Refill components as needed.
