Preparation of Eggs

    Boil the Eggs

    Place the large eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium heat.

    Simmer and Cool

    Once the water boils, cover the saucepan and remove it from heat. Let the eggs sit in the hot water for 9-12 minutes, depending on how cooked you prefer the yolk. After the time is up, transfer the eggs to an ice bath to cool for about 5 minutes.

    Peel the Eggs

    Once cooled, gently tap the eggs on a hard surface to crack the shell, then peel the shells off under running water to help remove them easily.

    Prepare the Filling

    Slice the peeled eggs in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and paprika to the yolks. Mash together until smooth and creamy.

    Using a spoon or piping bag, fill the hollowed egg white halves with the yolk mixture.
