Prepare the Batter

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, beat the egg, then add the milk, melted butter, and vanilla extract. Mix until smooth.

    Combine Both Mixtures

    Pour the wet ingredient mixture into the bowl with the dry ingredients. Stir gently until just combined; do not overmix. The batter should be slightly lumpy.

Cook the Pancakes

    Preheat the Pan

    Heat a non-stick skillet or griddle over medium heat. Lightly grease with a little butter or cooking spray.

    Pour the Batter

    Using a ladle or measuring cup, pour about 1/4 cup of batter onto the skillet for each pancake.

    Cook the Pancakes

    Cook the pancakes for about 2-3 minutes, or until bubbles form on the surface and the edges start to look set. Flip and cook for an additional 1-2 minutes until golden brown.
