    Prepare the Vegetables

    Preheat your oven to 400°F (200°C). Wash and trim the heirloom carrots and fingerling potatoes. Cut the fingerling potatoes in half lengthwise.

    Roast the Vegetables

    Toss the heirloom carrots and fingerling potatoes with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and caramelized, tossing halfway through.

    Caramelize the Onions

    While the vegetables are roasting, slice the onion thinly. Heat a skillet over medium heat with a little olive oil. Add the onions and cook, stirring often, until they are golden brown and caramelized, about 15-20 minutes.

    Cook the Ribeye

    Season the ribeye steak with salt and black pepper on both sides. In a separate skillet over high heat, add a tablespoon of olive oil. Once hot, sear the ribeye for about 4-5 minutes on each side for medium-rare, adjusting the time for desired doneness.

    Finish the Dish

    Once the ribeye is cooked to your liking, remove it from the skillet and let it rest for 5 minutes. Drizzle hot honey over the ribeye before serving. Serve with caramelized onions, roasted heirloom carrots, and roasted fingerlings.
