Make the Brown Butter Shortbread Shell
In a saucepan, melt the butter over medium heat until it turns golden brown and has a nutty aroma. Remove from heat and let cool slightly. In a bowl, mix the flour, powdered sugar, and salt. Add the brown butter and egg yolks, mixing until a dough forms. Press the dough into a tart pan evenly, and chill for 30 minutes.

Pre-bake the Tart Shell
Preheat the oven to 350°F (175°C). Bake the chilled tart shell for 15 minutes or until lightly golden. Remove from the oven and let cool.

Prepare the Apple Filling
In a large bowl, combine the sliced apples, brown sugar, macaroon paste, cinnamon, nutmeg, bourbon, and vanilla extract. Mix until the apples are well coated.

Assemble the Tart
Spread the apple filling evenly into the pre-baked tart shell.

Bake the Tart
Bake in the same oven for 45-50 minutes, or until the apples are tender and the top is golden. Allow to cool slightly before serving.
