    Prepare the crust

    Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let it cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and mix until well combined. Add the sour cream and vanilla extract, mixing until smooth. Add eggs one at a time, mixing on low speed until just combined.

    Add seasonal fruit

    Gently fold in the seasonal fruit puree into the cheesecake filling until just combined. Pour the filling over the cooled crust in the springform pan.

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.

    Chill and serve

    Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours or overnight. Before serving, mix the seasonal fruit puree with sugar and drizzle over the cheesecake.
