Method

Miso Caramel Ice Cream

    Make the Caramel

    In a saucepan over medium heat, combine the granulated sugar and butter. Stir until melted and golden brown, about 5-7 minutes. Add miso paste and stir until fully incorporated.

    Combine Dairy

    In a separate bowl, whisk together the heavy cream, milk, egg yolks, vanilla extract, and salt.

    Combine Mixtures

    Slowly pour the warm caramel mixture into the dairy mixture while whisking continuously to avoid cooking the eggs.

    Chill and Churn

    Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions. Once churned, freeze for at least 4 hours before serving.

Hot Fudge

    Make the Fudge

    In a saucepan over medium heat, combine granulated sugar and cocoa powder. Gradually whisk in the heavy cream until smooth.

    Stir in the butter and vanilla extract. Simmer for about 5 minutes until slightly thickened. Remove from heat and set aside.

    In a bowl, crush the chocolate cookies until they are fine crumbs.

Bruleed Banana

    Prepare Bananas

    Slice the bananas in half lengthwise.

    Sprinkle the granulated sugar over the cut sides of the bananas. Using a kitchen torch, carefully caramelize the sugar until it forms a golden crust.

Whipped Cream

    Whip the Cream

    In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract.

    Beat Until Stiff Peaks

    Using a hand mixer or stand mixer, beat the mixture until stiff peaks form. Set aside.

Assembly

    Assemble the Sundae

    In a bowl, scoop a generous portion of miso caramel ice cream. Top with hot fudge, cookie crumble, bruleed banana halves, and a dollop of whipped cream.

    Finish with a Luxardo cherry on top of the whipped cream. Serve immediately.
