Method

Focaccia Preparation

Activate Yeast

In a mixing bowl, combine warm water with active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Ingredients

Add the all-purpose flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.

Knead Dough

Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

Shape and Second Rise

After rising, punch down the dough and transfer it to a greased baking sheet. Stretch it out to fit the pan and create dimples with your fingers. Sprinkle fresh rosemary and coarse sea salt on top. Let it rise for another 30 minutes.

Bake

Preheat the oven to 425°F (220°C). Bake the focaccia for 20-25 minutes until golden brown. Allow it to cool before serving.

Sourdough Preparation

Mix Ingredients

In a large bowl, combine the bread flour, whole wheat flour, and salt. In another bowl, mix the water and sourdough starter.

Combine and Knead

Add the wet mixture to the dry ingredients and stir until a shaggy dough forms. Knead for about 10 minutes until smooth.

First Rise

Place the dough in a lightly greased bowl, cover it, and let it rise at room temperature for 4-6 hours or until doubled in size.

Shape Dough

Once risen, gently turn the dough out onto a floured surface. Shape it into a round loaf and place it in a floured proofing basket.

Second Rise

Cover the dough and let it rise again for 1-2 hours until puffy.

Bake

Preheat the oven to 450°F (230°C) with a Dutch oven inside. Carefully place the dough into the hot Dutch oven, cover, and bake for 30 minutes. Remove the lid and bake for an additional 15-20 minutes until deeply browned.

Prepare Dipping Sauce

In a small bowl, mix together the balsamic vinegar and extra virgin olive oil. Season with sea salt and freshly cracked black pepper to taste.

Add Fresh Herbs

Finely chop the fresh herbs and mix them into the dipping sauce.
