Tuna Preparation

    Season the Tuna

    Pat the fresh tuna steaks dry with paper towels. Season both sides with salt and black pepper.

    Sear the Tuna

    Heat olive oil in a skillet over high heat. Once hot, add the tuna steaks and sear for 1-2 minutes on each side for rare, adjusting the time for desired doneness. Remove from skillet and let rest.

Crispy Leeks

    Prepare the Leeks

    Slice the leeks into thin rings. Rinse them well under cold water to remove any dirt and grit.

    Dredge the Leeks

    In a bowl, toss the leeks with all-purpose flour and salt until evenly coated.

    Fry the Leeks

    Heat vegetable oil in a deep skillet over medium-high heat. Fry the floured leeks in batches until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

Red Curry Remoulade

    In a small bowl, combine mayonnaise, red curry paste, lime juice, and chopped cilantro. Stir until well mixed and set aside.

Cabbage Slaw

    In a large bowl, combine shredded green cabbage and shredded carrot.
