Marinade Preparation

Prepare the Marinade
In a medium bowl, whisk together olive oil, fresh lemon juice, minced garlic, chopped rosemary, salt, and black pepper until well combined.

Marinate the Chicken
Place the chicken thighs in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for better flavor.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Vegetables
In a large bowl, toss the chopped vegetables with a drizzle of olive oil, salt, and pepper to taste.

Arrange Chicken and Vegetables
In a large baking dish, arrange the marinated chicken thighs skin-side up. Scatter the seasoned vegetables around the chicken.

Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is golden brown. Ensure the internal temperature of the chicken reaches 165°F (75°C).
