Base Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until fully combined.

Melt Butter
In a small saucepan, melt the unsalted butter over low heat and then let it cool slightly.

Combine Mixtures
Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.
Filling Preparation

Prepare Blueberries
In a medium bowl, gently toss the fresh blueberries with lemon zest, lemon juice, and cornstarch until the blueberries are coated.
Assembly & Topping

Layer the Base and Filling
Spread half of the batter into a greased baking dish. Then, evenly distribute the blueberry mixture over the batter. Finally, spoon the remaining batter over the blueberries.

Prepare Topping
In a small bowl, combine brown sugar, oats, cinnamon, and melted butter. Mix until crumbly.

Add Topping
Sprinkle the oat topping evenly over the batter in the baking dish.

Bake
Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve
Allow the PlumpJack to cool for about 10 minutes before slicing and serving.
