Filet Mignon

Prepare the Steaks
Season both filet mignon steaks with salt and black pepper on all sides.

Rest the Steaks
Remove the steaks from the skillet and let them rest for 5-10 minutes before serving.
Horseradish Mashed Potatoes

Boil the Potatoes
Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, horseradish, salt, and black pepper, and mash until smooth.
Asparagus

Prepare the Asparagus
Trim the ends of the asparagus. Toss with olive oil, salt, and black pepper.

Roast the Asparagus
Spread the asparagus on a baking sheet and roast in a preheated oven at 400°F (200°C) for 10-12 minutes until tender.
Demi Glaze
Confit Tomato Butter

Prepare the Tomatoes
In a small saucepan, melt butter over low heat. Add halved cherry tomatoes, minced garlic, and salt. Cook gently until tomatoes are soft, about 10 minutes.

Stir in fresh basil and remove from heat. Blend the mixture for a smoother texture, if desired.
