Lemon Poppyseed Cake

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Add Wet Ingredients
Add the eggs one at a time, mixing well after each addition. Stir in the buttermilk, vanilla extract, lemon zest, and lemon juice.

Combine Mixtures
Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the poppy seeds.

Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
Vanilla Buttercream

In a mixing bowl, beat the softened butter until creamy.

Gradually add the powdered sugar, mixing on low speed until combined. Increase the speed and add vanilla extract and heavy cream. Beat until fluffy.

Stir in the lemon juice and zest. Cook over medium heat, stirring constantly until the mixture thickens (about 10 minutes).

Remove from heat and stir in the butter until melted and fully combined. Let cool before using.
Whipped Cream

In a mixing bowl, beat the heavy whipping cream until soft peaks form.

Gradually add powdered sugar and vanilla extract, then continue to beat until stiff peaks form.
Shortbread Crumble

Spread the mixture on a baking sheet and bake at 350°F (175°C) for 15-20 minutes until golden brown. Let cool.
Sweet Tea Ice Cream

In a bowl, whisk together heavy cream, sweet tea, sugar, and vanilla extract until well combined.
