Prep wings
Pat the chicken wings dry with paper towels. Removing surface moisture helps them crisp.
Place wings in a large bowl. Add kosher salt, black pepper, baking powder and vegetable oil. Toss thoroughly so wings are evenly coated. The baking powder raises the pH and promotes browning and crisping.
Arrange wings on a wire rack set over a rimmed baking sheet, spaced so air can circulate. For best results, refrigerate uncovered for 30 minutes to 2 hours to dry the skin further (optional).
Preheat oven to 425°F (220°C). Bake wings for 25 minutes, then flip and bake an additional 15–20 minutes until skin is deep golden and crisp and internal temperature reaches 165°F (74°C). If you prefer extra crispness, broil 1–2 minutes watching closely.
Sweet BBQ Sauce
While wings bake, make the sauce. In a small saucepan over medium-low heat combine ketchup, brown sugar, apple cider vinegar, honey and Worcestershire sauce. Stir to combine.
Add smoked paprika, garlic powder, onion powder and optional hot sauce. Bring to a gentle simmer, then reduce heat to low and simmer 3–5 minutes, stirring, until sugar dissolves and flavors meld. If sauce seems too thick, whisk in 1–2 tablespoons of water to reach a glossy, pourable consistency.
Taste and adjust: add a pinch more salt, a touch more vinegar for brightness, or more honey if you want it sweeter. Remove from heat and set aside.
Tossing & Finishing
Optional glaze step: return coated wings to the oven on the rack for 3–5 minutes at 425°F to set the sauce, then remove.
House Ranch Dressing
While wings roast, whisk together mayonnaise, sour cream and buttermilk in a bowl until smooth.
Stir in chopped chives, parsley, dried dill, minced garlic, lemon juice, salt and black pepper. Taste and adjust seasoning or thickness (add a bit more buttermilk if you prefer thinner dressing). Chill in refrigerator until ready to serve — at least 10 minutes so flavors meld.
