Method
Grilled Shrimp
Prep Shrimp and Marinade
Pat the shrimp dry with paper towels. In a large bowl, whisk together 3 tbs olive oil, 2 tbs lemon juice, smoked paprika, garlic powder, dried oregano, dried thyme, cayenne, kosher salt and black pepper. Add the shrimp and toss to coat evenly. Let marinate 10–20 minutes at room temperature (no longer than 30 minutes to avoid texture changes).
Preheat Grill
Preheat an outdoor grill or grill pan to medium-high (around 400–450°F / 200–230°C). Oil the grates lightly to prevent sticking.
Grill Shrimp
Thread shrimp onto skewers (2–3 shrimp per skewer) or place directly on the grill in a single layer. Grill 2–3 minutes per side until opaque and just firm; total cook time about 4–6 minutes depending on size. Avoid overcooking. As shrimp come off the grill, brush with melted butter (about 2 tbs) and sprinkle with 2 tbs chopped fresh parsley.
Garlic Toast
Prepare Garlic Butter
In a small bowl, combine softened unsalted butter, minced garlic, grated Parmesan (if using), chopped parsley and 1/4 tsp salt. Mix until smooth.
Finish
Cut garlic toast slices in half if desired. Keep warm until shrimp are ready to assemble.
Classic Rémoulade Sauce
Combine Ingredients
In a small bowl, whisk together 1/2 cup mayonnaise, 2 tbs creme fraiche or sour cream, 1 tsp Dijon mustard, chopped capers, chopped cornichons or pickles, 1 tsp lemon juice, 1/2 tsp Worcestershire sauce and 1/4 tsp hot sauce.
Season
Stir in 1/2 tsp paprika, 1 tbs chopped fresh parsley, 1/4 tsp salt and 1/4 tsp black pepper. Taste and adjust acidity or heat as desired. Chill in refrigerator for at least 15 minutes to allow flavors to meld.
Assembly & Serving
Place two slices of warm garlic toast on each plate (or one large slice). Arrange 6 grilled shrimp per plate over the toast. Spoon 1–2 tbs of rémoulade on the side or drizzle lightly over the shrimp.
Garnish plates with an extra sprinkle of chopped parsley and a lemon wedge. Serve with your choice of salad, side and dessert. For family-style service, transfer shrimp skewers to a platter and serve remaining rémoulade in a small bowl.
Optional Salad / Side / Dessert
Toss mixed greens with 1/2 cup vinaigrette just before serving. Prepare chosen side (baked potato, fries, steamed broccoli) according to standard method and serve alongside the toast and shrimp. Offer dessert separately after the meal.
