Bring to room temperature

Remove the 6 oz center-cut sirloin from the refrigerator and let sit covered at room temperature for 20–30 minutes. Pat the steak dry with paper towels to remove surface moisture — this helps achieve a good sear.

Season

Evenly season both sides of the steak with the kosher salt, freshly ground black pepper, and garlic powder. Press the seasonings gently into the meat so they adhere.

For cooking

Preheat pan

Place a heavy skillet or cast-iron pan over medium-high heat for 3–4 minutes until very hot. When the pan is hot, add 1 tablespoon neutral oil and swirl to coat.

Sear the steak

Carefully place the seasoned sirloin into the hot pan. Let it sear undisturbed for 2–3 minutes to form a brown crust. Flip the steak and sear the other side for 2–3 minutes for medium-rare (internal temperature ~130–135°F / 54–57°C). Adjust time ±1 minute for desired doneness (shorter for rare, longer for medium/well).

Finish with butter and aromatics

With the steak flipped (after the second sear), reduce heat to medium. Add 1 tablespoon unsalted butter, the crushed garlic clove, and the thyme or rosemary sprig to the pan. Tilt the pan slightly and use a spoon to continuously baste the steak with the melted butter and aromatics for 30–60 seconds to add flavor and finish cooking.

Rest

Transfer the steak to a cutting board or plate and tent loosely with foil. Rest for 5–7 minutes to allow juices to redistribute. Resting will raise internal temperature a few degrees and produce a juicier steak.

To serve (optional)

If serving whole: slice the steak against the grain into 1/4-inch slices. Sprinkle with chopped parsley and serve with lemon wedges on the side to brighten the flavor. If serving sliced for sharing or on a platter, arrange slices slightly overlapping and spoon any reserved pan juices over the top.
