    Marinate the Pork

    In a blender, combine pineapple juice, white vinegar, guajillo chiles, ancho chiles, garlic, cumin, oregano, salt, and black pepper. Blend until smooth. Pour this marinade over the pork shoulder in a large bowl, cover, and refrigerate for at least 4 hours or overnight.

    Cook the Pork

    Preheat the grill or a skillet over medium-high heat. Remove the pork from the marinade and grill or sear for about 20-25 minutes, turning occasionally, until the pork is cooked through and has a nice char. Let it rest for a few minutes before slicing it thinly.

    Prepare the Tacos

    Warm the corn tortillas on the grill or in a skillet. Place a few slices of the cooked pork on each tortilla. Top with diced onions and chopped cilantro.

    Serve

    Serve the tacos with lime wedges on the side for squeezing over the top.
