    In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent. Add minced garlic, ground beef, chili powder, cumin, salt, and pepper. Cook until the beef is browned and cooked through. Drain excess fat and set aside.

    Prepare Sopapilla Dough

    If using store-bought sopapilla dough, roll it out according to package instructions. If making from scratch, combine flour, baking powder, and a pinch of salt, then add water to form a dough. Roll out to about 1/4 inch thickness.

    Cut the sopapilla dough into circles or squares large enough to hold the beef filling. Place a generous amount of the beef mixture on half of the dough pieces. Top with shredded cheese, then cover with another piece of dough. Seal the edges by pressing down with a fork.

    In a deep skillet or fryer, heat oil to 350°F (175°C). Carefully place the assembled sopapilla burgers into the hot oil and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
