Roasting the Chiles
Preheat your oven to 400°F (200°C). Place the Anaheim chiles on a baking sheet and roast them in the oven for about 15-20 minutes, or until the skins are blistered and charred. Remove from the oven, cover with a kitchen towel, and let them steam for about 10 minutes.

In a bowl, mix together the Monterey Jack cheese, cream cheese, cooked pork sausage, garlic powder, cumin, salt, and black pepper until well combined.

Stuffing the Chiles
Once the chiles are cool enough to handle, peel off the charred skin and make a slit down the side of each chile to remove the seeds. Carefully stuff each chile with the cheese and sausage mixture.

Place the stuffed chiles on a baking dish and bake in the oven for an additional 20 minutes at 375°F (190°C) or until the cheese is melted and bubbly.
