Cooking Instructions
- 1
Prepare the Chilies
Remove stems and seeds from the dried chilies. Soak them in hot water for about 20 minutes until softened.
- 2
Make the Marinade
In a blender, combine the softened chilies, garlic, cumin, oregano, salt, black pepper, lime juice, and a cup of chicken broth. Blend until smooth.
- 3
Marinate the Pork
Cut the pork into large chunks and place in a bowl. Pour the marinade over the pork, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- 4
Brown the Pork
In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Add the marinated pork in batches, browning on all sides. Remove the pork and set aside.
- 5
Cook the Meat
Add the chopped onion to the pot and sauté until translucent. Return the browned pork to the pot. Add the remaining chicken broth and bring to a simmer. Cover and cook on low heat for about 2-3 hours, or until the pork is tender.
- 6
Serve
Once cooked, shred the pork with two forks, and serve the Carne Adovada with rice, tortillas, or your favorite sides.
