Prepare the Filling
In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for an additional minute. Add the shredded chicken, cumin, salt, and pepper. Mix well and cook for another 2-3 minutes. Remove from heat and stir in chopped cilantro.

Assemble the Enchiladas
Preheat your oven to 375°F (190°C). Spread a thin layer of red enchilada sauce on the bottom of a baking dish. Take a corn tortilla, add a portion of the chicken filling, sprinkle some cheese, and roll it up. Place the rolled tortilla seam-side down in the baking dish. Repeat with the remaining tortillas.

Add Sauce and Cheese
Once all enchiladas are in the dish, pour the remaining red enchilada sauce over the top, making sure to cover all enchiladas. Sprinkle the remaining cheese on top.

Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve
Let the enchiladas cool for a few minutes before serving. Garnish with additional cilantro if desired.
