    In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent. If using jalapeño, add it now and cook for an additional 2 minutes. Stir in the refried beans and season with salt. Remove from heat.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). Take a corn tortilla, place a spoonful of the bean mixture and a sprinkle of cheese in the center. Roll the tortilla tightly and place it seam-side down in a greased baking dish. Repeat this process for all tortillas.

    Add Sauce and Cheese

    Once all the tortillas are in the baking dish, pour the enchilada sauce evenly over the top. Sprinkle remaining cheese and black olives (if using) over the sauce.
