    Prepare the filling

    In a skillet over medium heat, add olive oil. Once hot, sauté the diced onion and minced garlic until softened, about 3-4 minutes. Stir in the shredded brisket, cumin, salt, and black pepper. Cook for an additional 5 minutes until heated through.

    Assemble the enchiladas

    Preheat the oven to 375°F (190°C). In a baking dish, spread a thin layer of enchilada sauce on the bottom. Take a corn tortilla, fill it with the brisket mixture, roll it up, and place it seam-side down in the baking dish. Repeat with remaining tortillas.

    Add sauce and cheese

    Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with shredded cheese. Top with chopped cilantro.
