In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.

Cook the Beef
Add the ground beef to the skillet, breaking it apart with a spatula. Season with cumin, chili powder, salt, and black pepper. Cook until the beef is browned and cooked through.

Assemble the Enchiladas
Preheat your oven to 350°F (175°C). In a large baking dish, spread a thin layer of enchilada sauce on the bottom. Take a tortilla, fill it with the beef mixture, sprinkle some cheddar cheese, then roll it up and place it seam-side down in the dish. Repeat with remaining tortillas.
