Pot de Creme Preparation

    Melt the Chocolate

    In a saucepan, combine the heavy cream and milk. Heat until just simmering. Remove from heat and add the chopped white chocolate, stirring until melted and smooth.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks, vanilla extract, and salt until well combined.

    Combine Mixtures

    Slowly pour the warm chocolate mixture into the egg yolk mixture while whisking continuously to temper the yolks.

    Bake

    Pour the mixture into small ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake at 150°C (300°F) for about 30-35 minutes or until set.

    Chill

    Allow to cool, then refrigerate for at least 2 hours before serving.

Peach Compote Preparation

    Cook Peaches

    In a saucepan, combine the diced peaches, sugar, lemon juice, and cinnamon. Cook over medium heat for about 10 minutes until the peaches are soft and the mixture is syrupy.

Brown Butter Streusel Preparation

    Brown the Butter

    In a skillet, melt the unsalted butter over medium heat, swirling occasionally until it turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.

    Prepare Streusel

    In a bowl, combine the brown butter, flour, brown sugar, and salt. Mix until crumbly. Spread on a baking sheet and bake at 180°C (350°F) for about 10-12 minutes until golden.
