Method
Fried Walleye
Prepare the Batter
In a bowl, combine cornmeal, flour, baking powder, salt, and pepper. In another bowl, whisk the egg and buttermilk together. Combine the wet and dry ingredients to form a batter.
Fry the Fish
Heat vegetable oil in a deep pan to 350°F (175°C). Dip walleye fillets into the batter and carefully place them in the hot oil. Fry for 3-4 minutes on each side until golden brown. Remove and drain on paper towels.
Hushpuppies
Mix the Ingredients
In a bowl, mix cornmeal, flour, baking powder, sugar, salt, and onion. In another bowl, whisk the egg and buttermilk. Combine wet and dry ingredients until just mixed.
Fry the Hushpuppies
Heat oil in a deep pan to 365°F (185°C). Drop spoonfuls of the mixture into the hot oil and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Braised Greens
Cook the Greens
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add collard greens, vegetable broth, salt, and pepper. Cover and simmer for about 20 minutes until greens are tender.
Miso-Honey Butter
Prepare the Butter
In a bowl, mix softened butter, miso paste, and honey until well combined and smooth.
