Prepare the Cashews
In a dry skillet over medium heat, toast the cashews until they are golden brown, about 5-7 minutes. Add the togarashi seasoning and stir to coat. Remove from heat and set aside.

Cook the Chicken
In a large pan, heat the oil over medium-high heat. Add the diced chicken and cook until browned and cooked through, approximately 5-7 minutes.

Make the Sauce
In a small bowl, combine fish sauce, brown sugar, soy sauce, minced garlic, and grated ginger. Stir until the sugar dissolves.

Combine Everything
Pour the sauce over the cooked chicken in the pan. Stir and cook for an additional 2-3 minutes until the sauce thickens.

Remove from heat, sprinkle with the toasted togarashi cashews and chopped green onions before serving.
