Roast the Beets
Preheat your oven to 400°F (200°C). Wash and trim the beets, then wrap each beet individually in aluminum foil. Place them on a baking sheet and roast for 45-60 minutes, or until a fork easily pierces through them. Once done, let them cool before peeling.

Roast the Onion
While the beets are roasting, slice the onion into thick rings. Toss them with olive oil, salt, and pepper. Spread the onion rings on a baking sheet and roast in the oven for about 25-30 minutes until they are caramelized and tender.

Prepare the Walnuts
In a dry skillet over medium heat, toast the black walnuts for about 5-7 minutes, stirring frequently to prevent burning. Once fragrant, remove from heat and let cool.

Assemble the Dish
Once the beets are cool, slice them into wedges. Arrange the roasted beets on a serving platter, top with roasted onion rings, crumbled goat cheese, and sprinkle toasted black walnuts on top. Garnish with fresh thyme.
