Cooking Instructions

  1. 1

    Prepare the Spice Crust

In a bowl, mix together paprika, cumin, brown sugar, salt, and black pepper until well combined.

  2. 2

    Prepare the Duck Breasts

Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Rub the spice mixture all over the duck breasts, ensuring it gets into the scored skin.

  3. 3

    Cook the Duck Breasts

Heat a skillet over medium-high heat. Place the duck breasts skin-side down in the skillet. Cook for about 6-8 minutes until the skin is crispy and golden brown. Flip the breasts and cook for another 4-6 minutes for medium-rare. Remove from the skillet and let rest.

  4. 4

    Prepare the Vegetables

In the same skillet, add the diced turnips and butternut squash. Sauté for about 10-12 minutes until tender and caramelized. Season with salt and pepper to taste.

  5. 5

    Make the Coffee Jus

In a small saucepan, add the brewed coffee and simmer on low heat until reduced by half. Season with salt and pepper to taste.

  6. 6

    Serve

Slice the duck breasts and serve over the sautéed turnips and butternut squash, drizzled with the coffee jus.
