    Prepare the Pork Belly

    In a pot, bring water to a boil, add pork belly, and simmer for about 1.5 hours until tender. Drain and let cool. Once cooled, cut into pieces.

    Braised Pork Belly

    In a skillet, heat olive oil over medium heat. Add the pork belly pieces, season with salt and pepper, and cook until crispy on all sides. Remove from heat and set aside.

    Grill the Pork Loin

    Preheat the grill to medium-high heat. Season the pork loin with salt and pepper. Grill for about 6-8 minutes on each side or until the internal temperature reaches 145°F (63°C). Let rest before slicing.

    Prepare the Sweet Potatoes

    Peel and dice the sweet potatoes. Boil them in salted water until tender, about 15 minutes. Drain and mash with a bit of olive oil, salt, and pepper.

    Sauté Brussels Sprouts

    Halve the Brussels sprouts and sauté them in olive oil over medium heat until golden brown and tender, about 8-10 minutes. Season with salt and pepper.

    In a small saucepan, heat the plum sauce until warm. Add a splash of pork jus to thin it out if necessary.

    On a plate, spread a layer of mashed sweet potatoes, top with grilled pork loin, and crispy pork belly. Arrange sautéed Brussels sprouts on the side, drizzle with plum glaze, and finish with a drizzle of pork jus.
