Prepare the Potatoes
Peel the Russet potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a bowl of cold water to remove excess starch. Let them soak for about 10 minutes.

Drain and Dry
After soaking, drain the potatoes and use a clean kitchen towel to squeeze out excess moisture. This step is crucial for achieving crispy hash browns.

Cook the Hash Browns
In a large skillet, heat the vegetable oil over medium heat. Add the grated potatoes and onion to the skillet. Spread them out evenly and press down slightly. Cook for 5-7 minutes until the bottom is golden brown.

Flip and Finish
Carefully flip the hash browns using a spatula. Cook for another 5-7 minutes until both sides are crispy and golden brown. Season with salt and black pepper to taste.
