Prepare the Filling
In a large bowl, combine the duck confit, mashed potatoes, camembert cheese, and finely chopped red bell pepper. Mix well until everything is evenly incorporated.

Season the Mixture
Add salt and black pepper to the duck mixture, adjusting to taste. Stir until well combined.

Form the Croquettes
Take small portions of the mixture and shape them into oval or round croquettes. Place them on a baking sheet lined with parchment paper.

Bread the Croquettes
Dip each croquette into the beaten eggs, allowing excess to drip off, then roll in breadcrumbs until fully coated. Place back on the baking sheet.

Fry the Croquettes
In a deep frying pan or pot, heat the oil over medium-high heat. Once hot, fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
