    Prepare Potatoes

    Preheat the oven to 400°F (200°C). Toss diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until golden and crispy.

    Make Apple-Fennel Salad

    In a bowl, combine thinly sliced apple and fennel. Drizzle with lemon juice and olive oil, then season with salt and pepper. Toss gently and set aside.

Cooking the Eggs and Assembling

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack eggs into small bowls and gently slide them into the water. Poach for about 3-4 minutes until whites are set but yolks remain runny. Remove with a slotted spoon and set aside.
