Prepare the custard
In a mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and nutmeg until well combined.

Soak the brioche
Dip each slice of brioche bread into the egg mixture, allowing it to soak for about 30 seconds on each side.

Cook the toast
In a large skillet over medium heat, melt the butter. Add the soaked brioche slices and cook until golden brown, about 3-4 minutes per side.

Prepare the glaze
In a small saucepan, combine the dry curaçao and maple syrup. Heat gently until warmed through.

Make the walnut crumble
In a bowl, mix the chopped walnuts with a tablespoon of maple syrup and a pinch of cinnamon. Toast in a skillet until fragrant.

Plate the French toast, top with blueberries, candied orange peel, drizzle with the dry curaçao glaze, and sprinkle with walnut crumble.
