Smoked Meatloaf Dinner Recipe

Meatloaf

    Prepare the Meat Mixture

    In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and smoked paprika. Mix until just combined.

    Shape the Meatloaf

    Transfer the mixture into a loaf shape and place it on a large piece of parchment paper or a greased baking dish.

    Add Ketchup

    Spread the ketchup evenly over the top of the meatloaf.

    Smoke the Meatloaf

    Preheat your smoker to 225°F (107°C). Place the meatloaf in the smoker and smoke for about 2 hours or until it reaches an internal temperature of 160°F (71°C).

Gravy

    Make the Roux

    In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1-2 minutes until golden.

    Add Broth

    Slowly whisk in the beef broth, ensuring no lumps form. Bring the mixture to a simmer and cook until thickened, about 5-7 minutes.

    Season the Gravy

    Add salt and black pepper to the gravy. Adjust seasoning to taste.

Mashed Potatoes

    Cook the Potatoes

    Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Assembly

    Plate the Dish

    Spoon a generous portion of mashed potatoes onto each plate. Top with slices of the smoked meatloaf and drizzle with gravy. Serve with barbecue sauce on the side.
