Preparing the Beef Brisket

Seasoning the Brisket
Rub the beef brisket with olive oil, then season generously with salt, black pepper, garlic powder, onion powder, and paprika. Ensure the seasoning covers all sides of the brisket.

Cooking the Brisket
Preheat your oven to 300°F (150°C). Place the seasoned brisket in a roasting pan and cover it with aluminum foil. Bake in the preheated oven for about 3-4 hours, or until the meat is tender and easily pulls apart with a fork.
Making the Bourbon BBQ Sauce

Combining Ingredients
In a medium saucepan, combine ketchup, bourbon, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper.

Cooking the Sauce
Bring the mixture to a simmer over medium heat, stirring occasionally. Once it starts to simmer, reduce the heat to low and let it cook for about 15-20 minutes until it thickens slightly.

Slicing the Brisket
Once the brisket is done, remove it from the oven and let it rest for about 15 minutes. Then, slice the brisket against the grain into thin slices.

Place sliced brisket on rolls and generously drizzle with bourbon BBQ sauce. Serve with pickles on the side.
