    Prepare the Vegetables

    Wash and chop the carrots, green beans, and bell peppers into bite-sized pieces.

    Cook the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the chopped vegetables and sauté for about 5-7 minutes until tender.

    Season the Vegetables

    Sprinkle garlic powder, salt, and black pepper over the sautéed vegetables and mix well. Cook for an additional 2 minutes.

    Serve

    Transfer the vegetable medley to a serving dish and serve hot.

Quinoa Salad

    Rinse the Quinoa

    Rinse the quinoa under cold water in a fine mesh strainer to remove bitterness.

    Cook the Quinoa

    In a pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the water is absorbed. Remove from heat and fluff with a fork.

    Prepare the Salad Ingredients

    Chop the cucumber and halve the cherry tomatoes.

    Combine Ingredients

    In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, and feta cheese.

    Dress the Salad

    In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the salad and mix well.

    Garnish and Serve

    Sprinkle fresh parsley on top and serve chilled or at room temperature.
