Boil the Pasta
In a large pot, bring salted water to a boil. Add 2 cups of elbow macaroni and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
Making Four Cheese Sauce

Prepare the Roux
In a medium saucepan, melt 4 tablespoons of butter over medium heat. Once melted, whisk in 1 tablespoon of all-purpose flour and cook for about 1-2 minutes until lightly golden.

Add Milk
Gradually add 2 cups of milk while continuously whisking to prevent lumps. Cook for about 5 minutes until the mixture thickens slightly.

Incorporate Cream Cheese
Add 4 ounces of cream cheese to the mixture, stirring until completely melted and combined.

Melt the Cheeses
Remove the saucepan from heat and stir in 1 cup of shredded mozzarella cheese, 1 cup of shredded gouda cheese, and 0.5 cup of grated Parmesan cheese until fully melted and smooth.

Season the Sauce
Add 1 teaspoon of salt, 0.5 teaspoon of black pepper, 0.5 teaspoon of garlic powder, and 0.5 teaspoon of onion powder to the cheese sauce. Mix well.
Combining and Baking

Combine Pasta and Sauce
In a large mixing bowl, combine the cooked elbow macaroni with the four cheese sauce, stirring to ensure all pasta is well coated.

Prepare for Baking
Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased baking dish.

Spread 1 cup of shredded cheddar cheese evenly on top of the macaroni and cheese mixture.

Bake in the preheated oven for 20-25 minutes, or until the cheese on top is melted and bubbly.
