Preparation

    Prepare the Ribs

    Begin by rinsing the spare ribs under cold water. Pat them dry with paper towels. Remove the membrane from the back of the ribs for better flavor absorption.

    Make the Rub

    In a bowl, combine brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Mix well until all ingredients are evenly distributed.

    Apply the Rub

    Rub the spice mixture generously over both sides of the ribs. Ensure that the ribs are fully coated. Wrap the ribs in plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Smoking

    Prepare the Smoker

    Soak hickory wood chips in water for at least 30 minutes before smoking. Preheat the smoker to a temperature of 225°F (107°C).

    Smoke the Ribs

    Place the ribs in the smoker, bone side down. Add the soaked hickory wood chips to the smoker box. Close the smoker and let the ribs smoke for 6 hours, maintaining a consistent temperature.

Finishing

    After 6 hours, remove the ribs from the smoker. Let them rest for 15-20 minutes before slicing. Serve with your favorite barbecue sauce if desired.
