    Add the diced onions, green bell pepper, and celery to the roux. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.

    Stir in the sliced Andouille sausage and diced chicken thighs. Cook for another 5-7 minutes until the chicken is browned.

Simmering

    Pour in the chicken broth and canned diced tomatoes. Add the minced garlic, bay leaves, thyme, cayenne pepper, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low.
