For the Fried Pickles

Method

For the Fried Pickles

  1. 1

    Prepare the Pickles

Drain the dill pickle slices and pat them dry with paper towels to remove excess moisture.

  2. 2

    Make the Batter

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well combined.

  3. 3

    Add Beer

Slowly pour in the beer while whisking continuously until the batter is smooth and thick enough to coat the back of a spoon.

  4. 4

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Pickles

Dip each pickle slice into the batter, allowing any excess to drip off. Carefully drop the battered pickles into the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes.

  6. 6

    Drain the Pickles

Using a slotted spoon, remove the fried pickles and place them on a plate lined with paper towels to absorb excess oil.

For the Chipotle Dressing

  1. 7

    Make the Dressing

In a small bowl, combine the mayonnaise, chipotle peppers (finely chopped), lime juice, garlic powder, and salt. Mix until smooth and well blended.

  2. 8

    Taste and Adjust

Taste the dressing and adjust seasoning or lime juice as desired.
