Method

Prepare Pickles

  1. 1

    Drain Pickles

Remove the dill pickle spears from the jar and drain them thoroughly on paper towels to remove excess moisture.

Make the Batter

  1. 2

    Combine Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and black pepper. Whisk until evenly mixed.

  2. 3

    Add Sparkling Water

Gradually pour in the cold sparkling water while whisking until the batter is smooth and thick enough to coat the back of a spoon.

Fry the Pickles

  1. 4

    Heat Oil

In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a deep-frying thermometer to ensure the correct temperature.

  2. 5

    Coat Pickles

Dip each pickle spear into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

  3. 6

    Fry Pickles

Carefully place the coated pickle spears into the hot oil in batches. Fry for 3-4 minutes or until golden brown and crispy. Avoid overcrowding the pot.

  4. 7

    Drain Excess Oil

Using a slotted spoon, remove the fried pickles from the oil and place them on a plate lined with paper towels to absorb excess oil.

Serve

  1. 8

    Prepare for Serving

Serve the deep-fried pickle spears hot with a side of ranch dressing for dipping.
