Corn Preparation

Boil the Corn
In a large pot, bring 4 cups of water to a boil. Add 1 tablespoon of salt to the boiling water.

Cook the Corn
Add the ears of corn to the boiling water. Cover and cook for 5-7 minutes, or until the corn is tender. Remove from water and set aside.
Chipotle Aioli

Make the Aioli
In a mixing bowl, combine 1 cup of mayonnaise, 2 tablespoons of chipotle peppers in adobo sauce, 2 minced garlic cloves, 1 tablespoon of lime juice, and 1 teaspoon of salt.

Mix Well
Whisk the mixture until smooth and well combined. Taste and adjust seasoning if necessary. Set aside.
Assembly

Top the Corn
Take each ear of corn and generously brush or drizzle with the chipotle aioli.

Add Toppings
Sprinkle crumbled cotija cheese and chopped cilantro over the aioli-covered corn.

Finish with Seasoning
Dust the corn with blackened seasoning to taste.

Serve
Serve the corn with lime wedges on the side for squeezing over the top.
