    Prepare the Collard Greens

    Thoroughly wash the collard greens under cold water to remove any dirt or grit. Trim the stems and chop the leaves into bite-sized pieces.

    Chop the Onion and Garlic

    Peel and chop the onion into small pieces. Peel the garlic cloves and mince them finely.

    Cook the Bacon

    In a large pot or Dutch oven, cook the bacon slices over medium heat until crispy. Remove the bacon and set it aside on a paper towel to drain, leaving the bacon fat in the pot.
