    Prepare the Brine

    In a large pot, combine the water, kosher salt, brown sugar, crushed garlic, black peppercorns, and bay leaves. Stir until the salt and sugar are dissolved.

    Brine the Chicken

    Submerge the halved chicken in the brine solution. Cover and refrigerate for at least 4 hours, preferably overnight.

Applying the Rub

    Prepare the Rub

    In a small bowl, mix together paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

    Season the Chicken

    Remove the chicken from the brine, rinse under cold water, and pat dry with paper towels. Rub the spice mixture all over the chicken, ensuring it's well coated.

Smoking the Chicken

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C) and add your choice of wood chips for smoking.

    Smoke the Chicken

    Place the chicken halves in the smoker, skin side up. Smoke for approximately 3 to 4 hours, or until the internal temperature reaches 165°F (74°C).

Serving

    Add Sauce

    Once the chicken is done smoking, remove it from the smoker and let it rest for 10 minutes. Slather with your choice of BBQ sauce before serving.
