Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Crust Ingredients
In a mixing bowl, combine 1.5 cups of graham cracker crumbs, 0.5 cups of granulated sugar, and 0.5 cups of melted unsalted butter. Stir until well mixed.

Press into Pan
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes, then remove and let cool while preparing the filling.

Beat Cream Cheese
In a large mixing bowl, beat 4 cups of softened cream cheese until creamy and smooth.

Add Sugar and Vanilla
Gradually add 1 cup of granulated sugar and 2 tsp of vanilla extract to the cream cheese, mixing until well combined.

Incorporate Sour Cream
Add 1 cup of sour cream to the mixture and blend until smooth.

Add Eggs
Add 4 large eggs one at a time, mixing well after each addition.

Add Flour
Finally, add 0.5 cups of all-purpose flour and mix until just combined.

Pour Into Crust
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake the Cheesecake
Bake in the oven at 350°F (175°C) for 50-60 minutes, or until the center is set and slightly jiggly.

Cool and Refrigerate
Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour. Then refrigerate for at least 4 hours, or overnight if possible.

Prepare Berries
In a bowl, mix 2 cups of fresh mixed berries with 1 tablespoon of powdered sugar. Let sit for about 10 minutes to release juices.

Serve
Once the cheesecake is chilled, top with the berry mixture and garnish with mint leaves. Slice and serve cold.
