Method

Preparation of House Chips

    Slice the Potatoes

    Wash and peel the potatoes. Using a mandoline or a sharp knife, slice the potatoes into thin rounds, about 1/8 inch thick.

    Soak the Potato Slices

    Place the sliced potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C) over medium heat.

    Fry the Chips

    Drain and pat the potato slices dry with paper towels. Carefully add them in batches to the hot oil and fry until golden brown, about 3-4 minutes per batch.

    Drain and Season

    Use a slotted spoon to transfer the fried chips to a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.

Sandwich Assembly

    Fry the Mortadella

    In a skillet over medium heat, add the mortadella slices and fry until crispy and golden, about 2-3 minutes per side.

    Toast the Buns

    While the mortadella is frying, cut the kaiser buns in half and toast them in a toaster or on a skillet until they are golden brown.

    Assemble the Sandwich

    On the bottom half of each toasted bun, place the crispy mortadella, followed by a slice of smoked gouda. Drizzle with hot honey to taste, then top with the other half of the bun.
